Roast for 1 hour in the preheated oven.

Roast at 550 f at 5 minutes per pound for rare or 6 minutes per pound for medium and 7 minutes per pound for well done.

Put the butter horseradish peppercorns and 2 tablespoons salt in a medium bowl and stir until evenly combined.

30 to 40 minutes before serving turn the oven back on at 375 degrees f 190 degrees c to reheat the roast.
